As a parent or grandparent, I’m sure many of us agree – there aren’t enough healthy snacks out there for kids. Here’s a favorite of mine, that tastes really good and the kids will never know they’re eating vegetables!
1 1/2 C all purpose flour, 1 tsp baking soda, 2 tsp baking powder, 1/4 + 1/8 tsp salt, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp allspice, 1/8 tsp ginger * 1/4 to 1/2 C sugar, (I usually use 1/4 cup brown sugar, because the apples sweeten it up a bit, too. (They will only be slightly sweet), 1 egg 1/2 C yogurt, (either plain or vanilla – I usually use plain, unsweetened) ** If you use vanilla flavored, definitely only use 1/4 cup sugar!! 1/3 C butter or unsweetened applesauce (I usually use butter but when using applesauce, they come out a little more spongy and not as fluffy, but kids never seem to notice), 1/2 tsp vanilla extract *Approx. 1 1/2 C of shredded zucchini, carrot and apple. (I put 1 zucchini, 1 small-ish apple and 1 carrot in a small food processor and it always equals 1.5 to 2 Cups) – I try to grind them up pretty small until they are almost mush so they’re pretty un-noticeable.
Directions: Mix up dry and wet ingredients in separate bowls. Add the dry to the wet mix everything just until its all incorporated. You don’t want to over-mix. It’ll be thick and lumpy, almost like a wet, slightly thinner cookie dough. bake in a greased muffin tin @ 400 degrees for 15-20 mins. voila!
