Omelet in a Mug is simple, fast and easy for a meal on the run… 2 Eggs, 2 Tablespoons Shredded Cheddar Cheese, Salt and Pepper to taste, 1 Tablespoons of your favorite Salsa, 1/2 avocado.
Directions: Into a mug, whisk together 2 eggs. Add salt and pepper and stir in cheese. Microwave on high for 1 2/2 – 2 minutes or until eggs are set. Top with sliced avocado and salsa. If you choose to remove from mug and serve on a plate…before you add eggs and ingredients, you might want to spray the mug with a non-stick spray for easy removal.
