Who wants to spend an entire night in the kitchen making a tasty meal, when you can prepare something mm, mm good in a flash.
Here is one that is “yummy good” that you can whip up for your significant other and he/she will be very appreciative.
- Just start by taking:
- 2 large Idaho baking potatoes
- 1 cup fresh broccoli florets
- 1 scallion, thinly sliced
- 3/4 cup chicken broth
- 2 tsp. low-sodium soy sauce
- 1 tsp. rice wine vinegar
- 2 tsp. cornstarch
- 8 peeled, deveined cooked medium shrimp
Pierce potatoes several times with fork. Wrap each potato in microwave-safe paper towel; arrange 1” apart in microwave oven.
Microwave on High 6-8 minutes, turning and rearranging once; let stand 2 minutes. With fork, pierce skin in shape of a cross. Press ends of potato toward center, lifting and fluffing potato flesh.
Combine scallion and broccoli in 9” microwave-safe pie plate; cover and microwave on High 2 -3 minutes until tender. Drain.
Combine broth, soy sauce, vinegar and cornstarch in 4-cup glass measuring cup; microwave, uncovered, on High 2-3 minutes, or until slightly thickened.
Pour sauce over broccoli; stir in shrimp. Spoon mixture over potatoes.
Pair this treat with a nice glass of wine, some romantic candles, some soft music and mmm, you’re good to go! Salud!
Makes 2 servings. 3 would definitely be a crowd in this setting.
